Red Velvet Mug Cake

- ¼ cup all-purpose flour
- 3 tbsp sugar
- 2 tsp unsweetened cocoa powder
- ¾ tsp beet powder
- ⅛ tsp baking soda
- 1 tbsp vegetable oil
- ⅛ tsp white vinegar
- ¼ cup cold water
- White chocolate chips, optional
- Coconut whipped cream, optional
- Prepared icing, optional
Combine the flour, sugar, unsweetened cocoa powder, beet powder, baking soda, vegetable oil, white vinegar, and cold water in a microwave safe mug. Stir with a fork to make sure there are no lumps or dry flour. Sprinkle batter with white chocolate chips, if using, and then microwave for 1 minute. Let mug cake stand 1 minute.
Top red velvet mug cake with additional white chocolate chips, coconut whipped cream, or your favorite plant-based icing. Dig in!
