Roasted Nuts
with Lemon & Sage
INGREDIENTS
- 3 tbsp olive oil
- 1 lemon, zest peeled
- 1 sprig rosemary
- 1 sprig sage
- 1 cup unsalted almonds
- 1 cup unsalted cashews
- 1 tsp salt
- 1 tsp paprika (optional)

Roast the nuts
In a large nonstick skillet, combine olive oil, lemon peel, rosemary and sage over medium heat and cook until little bubbles start to form around the herbs and lemon peel. Add nuts and salt and cook, stirring occasionally until the nuts become golden brown, 6 to 8 minutes. If you like a little smoky/spicy flavor, add paprika. Turn off the heat and let cool slightly before serving. TIP: The nuts will get crunchier as they cool.
