- 2 tbsp flaxseed meal
- ½ cup Flora Plant Butter (unsalted)
- 2 cups all-purpose flour
- 1 tsp baking powder
- ¾ tsp baking soda
- ⅓ cup light brown sugar
- ½ cup cane sugar
- ¾ tsp kosher salt
- 1 tsp vanilla extract
- ⅓ cup dried tart cherries
- 3 oz bittersweet chocolate, chopped
- Flaky sea salt to finish
Preheat the oven to 375°F. Line two baking sheets with parchment paper. Combine the flaxseed meal and 5 tbsp warm water in a small bowl. To a small saucepan, add the butter and melt over low heat.
Combine the flour, baking powder, baking soda, brown sugar, cane sugar, and salt in a large bowl. Mix, breaking up any clumps. Slowly pour the melted butter, vanilla extract, and flax egg into the dry mixture while mixing. Stir until fully combined and there is no dry flour. Fold in the dried cherries and chocolate chips (you may need to use your hands).
Measure out 2 tbsp portions of the cookie dough and roll into a ball. Add dough balls to the prepared cookie sheet and gently press into ½ inch thick cookies. Sprinkle with a flaky sea salt and bake for 15 to 18 minutes, until lightly browned.
