Salted Coffee Brownies
INGREDIENTS
- 1 cup all purpose flour
- ½ tsp baking powder
- ¾ tsp kosher salt
- ½ cup strong brewed coffee, very hot
- ⅓ cup + 2 tbsp semisweet chocolate chips, divided
- ½ cup cocoa powder
- 1 cup sugar
- ¼ cup vegetable oil
- 1 tsp vanilla extract
- ¼ tsp baking soda
- 1 tsp apple cider vinegar
INSTRUCTIONS
Preheat the oven to 350°F. Generously coat an 8x8 baking pan with cooking spray or vegan butter. In a medium bowl, whisk together the flour, baking powder, and kosher salt.
In a separate large bowl, add your hot coffee and 2 tbsp chocolate chips. Whisk until chocolate is melted and smooth. Add the cocoa powder, sugar, vegetable oil, vanilla extract, baking soda, and apple cider vinegar, and whisk again until smooth.
Add the flour mixture to the large bowl with the chocolate, and using a rubber spatula, mix until well-combined. Gently fold in the remaining ⅓ cup chocolate chips. Transfer brownie batter to the prepared pan, using your spatula to spread to the sides and smooth the top. Bake until a toothpick inserted comes out mostly clean (a little chocolate is ok!), about 23-26 minutes. Cool, slice into 9 squares, and dig in!
