Thai Iced Tea Popsicles
INGREDIENTS
- 4 cup water
- ¾ cup turbinado sugar, divided
- 6 bags Thai tea or rooibos tea
- 1 cup sweetened coconut milk
Tools: Popsicle molds, Small saucepan, Medium saucepan
INSTRUCTIONS

Make the popsicle mixture
Add water and sugar to a medium saucepan over high heat until water boils, 4 to 5 minutes. Turn off heat and add tea bags. Let steep 5 to 7 minutes. Remove tea bags and let mixture chill completely.

Freeze the popsicles
Whisk coconut milk in a medium bowl so that the coconut cream is evenly distributed. Pour coconut milk into each popsicle mold and freeze until mostly solid, 20 to 30 minutes. Add tea mixture and freeze until until solid, about 4 hours. Enjoy!
