Every region of Spain has it’s own delicacy, and this one hails from the northeastern region, Catalunya, where paella meets risotto. Long pasta is broken into shorter lengths and toasted in olive oil before getting cooked in only a small amount of liquid and vegetables. Cured black olives top it off and the garlic aioli can be drizzled on or enjoyed on the side.
