Make the dough
Preheat the oven to 350°F. Line a baking sheet with parchment paper. Add the peanut butter, maple syrup, and ½ tsp salt to a food processor. Blend until the peanut butter thickens, about 1 to 2 minutes.

Shape the cookies
Measure out 2 tbsp portions of cookie dough and roll into 12 balls. Using the back of a fork, press a criss-cross pattern into each cookie, flattening into a disc about ½ inch thick. Sprinkle with sesame seeds.

Bake the cookies
Bake the cookies until lightly browned, about 10 to 12 minutes. Allow to cool completely before enjoying.
