Green Shawarma Burgers
with Lemon-Sesame Yogurt & Cucumber Salad
This fragrant burger is inspired by the heavily seasoned Middle Eastern rotisserie dish, shawarma. A bold spice blend consisting of cumin, cinnamon, turmeric, and coriander infuses these burger patties with warmth and toasty richness. Cooling lemony yogurt sauce and crisp, refreshing cucumber salad complement the "meaty" burger patty perfectly.

INGREDIENTS
- 1 cucumber, peeled into ribbons
- 1 shallot, peeled and thinly sliced into rings (divided)
- 1 lemon, zested and juiced (divided)
- 1 tbsp white sesame seeds
- 2 tbsp Forager Project® Organic Dairy-free Cashewmilk Yogurt
- 2 pretzel burger buns, sliced
- 1 tbsp ras el hanout
- 2 Actual Veggies® Green Burgers
- 3 tbsp olive oil*
- 3 tbsp vegetable oil*

INSTRUCTIONS
Stir together cucumber, just half the shallot, just 1 tbsp lemon juice, 2 tbsp olive oil, and a pinch of salt and pepper in medium bowl. Set aside until step 5. (4-servings: use 2 tbsp lemon juice, ¼ cup olive oil) (TIP: Keep remaining shallot for your own use.)
Stir together sesame seeds, yogurt, lemon zest, 1 tbsp olive oil, and a pinch of salt and pepper in small bowl. (4-servings: use 2 tbsp olive oil)
Heat 1 tbsp vegetable oil in large nonstick skillet over medium heat. Add buns, cut side down, and cook until golden brown, 2 to 3 minutes. Transfer to serving plates and set aside. (4-servings: use 2 tbsp vegetable oil)
Sprinkle ras el hanout on both sides of burgers. Heat 2 tbsp vegetable oil in same skillet over medium heat, add spiced burgers to skillet, and cook until burgers are golden brown, 5 to 6 minutes per side. (4-servings: use ¼ cup vegetable oil)
Add burgers to bottom buns. Dollop lemon-sesame yogurt on burgers, top with cucumber salad, and close buns. Serve green shawarma burgers with extra lemon-sesame yogurt and cucumber salad. Enjoy!
