Start the cucumber salad

Combine cucumber, just half the shallot, just 1 tbsp lemon juice, 2 tbsp olive oil, and a pinch of salt and pepper in medium bowl. Set aside until step 4. (4-serving meal: use 2 tbsp lemon juice, ¼ cup olive oil) (TIP: Keep remaining shallot and lemon juice for your own use.)

Make the lemon-sesame sauce

Combine sesame seeds, yogurt, lemon zest, 1 tbsp olive oil, and a pinch of salt and pepper in a small bowl. Stir to combine. (4-serving meal: use 2 tbsp olive oil)

Toast the buns

Heat 1 tbsp vegetable oil in large nonstick skillet over medium heat. Add buns, cut side down, and cook until golden brown, 2 to 3 minutes. Transfer to serving plates and set aside. (4-serving meal: use 2 tbsp vegetable oil)

Cook the burgers

Sprinkle ras el hanout on both sides of burgers. Heat 2 tbsp vegetable oil in same skillet over medium heat, add spiced burgers to skillet, and cook until burgers are golden brown, 5 to 6 minutes per side. (4-serving meal: use ¼ cup vegetable oil)

Serve

Top bottom buns with burgers. Dollop lemon-sesame yogurt on burgers, top with cucumber salad, and close buns. Serve green shawarma burgers with extra lemon-sesame yogurt and cucumber salad. Enjoy!
