Vanilla Birthday Cake Bites

- ½ cup rolled oats
- 2 tbsp unflavored pea protein
- ¾ cup unsweetened shredded coconut flakes
- ½ tsp vanilla extract
- ¼ cup unsalted creamy cashew butter
- ¼ cup macadamia nuts
- ¼ cup agave
- ½ cup rainbow sprinkles
To a food processor, add the rolled oats, pea protein, shredded coconut flakes, vanilla extract, cashew butter, macadamia nuts, and agave. Blend until well combined, about 2 to 3 minutes. Add the sprinkles and pulse a few times to evenly distribute.
Roll the oat mixture into 2 tbsp sized-balls; you should get about 10. Store in the refrigerator for 2 weeks, or freeze for up to 4 weeks. Enjoy! TIP: For a chocolate version, add 2 tsp cocoa powder.
