Rancheros, meaning “in the style of the ranch,” usually refers to huevos rancheros, a hearty Mexican breakfast dish with eggs, refried beans, and corn tortillas. We swap in avocado quarters, as avocado or guacamole is often included on the side, and poach them directly in a garlicky pinto bean mash. (Warmed avocado is a surprising treat.)
