INSTRUCTIONS

Cook the burgers and onions

Heat 2 tbsp vegetable oil in a large nonstick skillet over medium-high heat. Add just half the onion and a pinch of salt and pepper to one side of the skillet. Add burgers to the other side of the skillet. Cook until onions are soft and starting to brown and burgers are golden brown, 5 to 6 minutes per side. Turn off heat, transfer burgers to a plate, and cover with foil to keep warm. (4-serving meal: use 4 tbsp vegetable oil). TIPS: Keep remaining onion for your own use. For the 4-serving meal, work in batches as needed.

Make the BBQ onions and aioli

Add BBQ sauce directly to the skillet and stir to combine with cooked onions. In a small bowl, combine mayo, garlic, and a pinch of salt and pepper and stir the aioli.

Make the arugula salad

Add arugula, pickled jalapeños and pickling liquid, 2 tsp olive oil, and a pinch of salt and pepper to a medium bowl. Toss to combine. (4-serving meal: use 4 tsp olive oil). TIP: If you are sensitive to spice, use fewer jalapeños or leave them out entirely.

Toast the buns

Position oven rack in the middle and set oven to broil on high. Toast buns directly on the oven rack until lightly browned, 1 to 2 minutes. TIP: All broilers are different. Watch carefully to ensure buns don’t burn.

Serve

Place the bottom half of each bun on a plate. Top with BBQ glazed onions, black bean burgers, and some of the spicy arugula salad. Spread aioli on top buns and close the burgers. Serve with remaining salad. Dig in!
