INSTRUCTIONS

Cook the burgers and onions

Heat 2 tbsp vegetable oil in a large nonstick skillet over medium-high heat. Add just half the onion to one side of the skillet and sprinkle with salt and pepper. Add burgers to the other side of the pan. Cook until onions are soft and starting to brown and burgers are golden brown, 5 to 6 minutes per side. Turn off heat, transfer burgers to a plate, and cover with foil to keep warm. (4-serving meal: use 4 tbsp vegetable oil) TIP: Keep remaining onion for your own use.

Make the BBQ onions and aioli

Add BBQ sauce directly to the pan and stir to combine with onions. In a small bowl, add vegan mayo, garlic, and a sprinkle of salt and pepper and stir.

Make the arugula salad

Add arugula, pickled jalapeños, pickle juice, 2 tsp olive oil, and a pinch of salt and pepper to a medium bowl. Toss to combine. (4-serving meal: use 4 tsp olive oil) TIP: If you are sensitive to spice, use fewer jalapeños or leave them out entirely.

Toast the buns

Set broiler to high and position oven rack in the middle. Toast buns in the oven until golden brown, 1 to 2 minutes. TIP: All broilers are different; watch carefully to ensure buns don’t burn.

Serve

Place the bottom half of each bun on a plate. Top with BBQ glazed onions, black bean burgers, and some of the spicy arugula salad. Spread vegan mayo on top bun and close the burger. Serve with remaining salad. Dig in!
