INSTRUCTIONS

Caramelize the onions

Peel and thinly slice the onion. Heat 1 tbsp olive oil in a medium nonstick skillet over medium-high heat. Add sliced onion and cook, stirring occasionally, until softened and lightly browned, 8 to 10 minutes. Toast the sourdough bread.

Build the sandwiches

To assemble the sandwiches, spread cashew cheese on one slice of toast. Top with some caramelized onion and baby arugula. Spread apricot preserves on another slice of toast, flip toast over, and place atop arugula. Repeat to make the second sandwich.
