Caramelize the onions

Heat 1 tbsp vegetable oil in large nonstick skillet over medium heat. Add shallot and a pinch of salt and pepper and cook, stirring occasionally, until softened and browned, 8 to 10 minutes. Transfer to small bowl and wipe skillet clean. (TIP: You can let the onion cook longer for more caramelization (a process that helps develop the shallot's color and flavor.))

Build the sandwiches

Lay sourdough on clean work surface. Spread butter on 1 side of each slice and flip over. Spread Dijon on 2 slices and top with apple slices. Top with caramelized shallot and cheddar. Gently close sandwiches with remaining sourdough, buttered side out.

Grill the sandwiches

Transfer sandwiches to same skillet over medium heat. Cook until golden brown and cheese has melted, 2 to 3 minutes per side. Cut cheddar apple melts in half and serve with remaining apple slices. (TIP: If your bread is getting too dark but cheese hasn’t melted yet, lower your heat.)
