Chinese Broccoli and Tofu

with Peanut Sauce

Mildly exotic and entirely lovable, peanut sauce is the star of this quick dish. Using naturally sweet peanut butter in a sauce is no revelation, but here it balances perfectly with soy sauce, rice vinegar, and sesame oil, altogether a great counterpoint for crunchy Chinese broccoli. If you have a wok, use it—its high sides mean additional surface area to brown up the tofu; if you don’t have one, your largest skillet will work just fine. Either way, be sure to let it get nice and hot before starting to cook.
