Cornmeal Arepas

with Black Beans and Zucchini Citrus Salsa

Arepas are tender, pan seared corn cakes made of masa harina. Masa harina, or maize flour, is finely ground flour traditionally usually used for tamales and corn tortillas; the dough will be slightly sticky when ready. Although delicious on their own, we’ve taken them to another level with a zucchini citrus salsa. To “supreme” your orange, carefully slice between the membrane and the flesh, cutting out the best part of the fruit.
