Jackfruit—a Southeast Asian fruit with a fresh flavor evocative of bamboo shoots, and a surprisingly hearty texture—is having an it-food moment right now, slowed only by its relative scarcity on American supermarket shelves. We’ve found a great source for jackfruit and put it center stage in this enchilada-style dish (enfrijoladas). Rolled in corn tortillas and baked in a smooth, smoky black bean sauce, jackfruit is a fun surprise. We don’t always follow trends, but this one is tasty enough to get on board with.
