Posole is a Mexican stew made with hominy, the dried corn that’s most often ground to make tortillas. Since hominy takes a long time to cook, we came up with an unusual solution for a weeknight version: popcorn. Mixed into a mole of ground pumpkin seeds, tomatillos, chiles, and herbs, with pinto beans and corn kernels added for heft, the popcorn melts into the stew at the last minute, imparting toasty dried corn flavor with a twist. It’s a one-pot dish that’s anything but everyday.
