INSTRUCTIONS
Preheat oven to 425°F. Combine carrots, sesame oil, sesame seeds, and a pinch of salt and pepper on baking sheet and toss. Bake carrot fries until tender and browned in spots, 18 to 20 minutes.
Stir together Sriracha and mayo in small bowl. In a medium bowl, combine just 3 tbsp Sriracha mayo and cabbage and toss to coat. (4-serving meal: use 6 tbsp Sriracha mayo)
Heat 2 tsp vegetable oil in large nonstick skillet over medium-high heat. Add green burgers and cook until golden brown, 5 to 6 minutes per side. Transfer to plate and cover to keep warm. Wipe skillet clean.
Place pretzel buns in same skillet, cut side down, and cook until golden brown, 2 to 3 minutes. Transfer to serving plates. Place green burger on bottom half of each bun. Top with Sriracha slaw and close with top bun. Serve with carrot fries and remaining Sriracha mayo. Enjoy!
