  5. 4 oz shredded carrot

INSTRUCTIONS

Prepare the chickpeas
Drain, rinse, and pat the chickpeas dry. Add the chickpeas to a large bowl and mash with the back of a fork. Add the Vegenaise and a good pinch of salt and pepper and mix well.

Build the salads
Halve the red grapes. Separate the lettuce leaves. Add the halved red grapes, shredded carrot, walnuts to the chickpeas and mix. Divide Waldorf chickpea salad into 2 portions and serve with lettuce leaves.
