Creamy and decadent, this caramel apple dip comes together in just minutes. Blended dates give the sauce body and a deep sweetness, without the trouble of caramelizing sugar. This recipe yields about 1 cup of caramel sauce, and we suggest using it for dip with freshly cut seasonal apples!

- 2 medjool dates, pitted
- 1 5.5 oz can coconut milk
- 2 tsp cornstarch
- ¾ cup coconut sugar
- 1 tsp vanilla extract
- ¼ tsp salt

INSTRUCTIONS
Check the dates for any pits and remove if present. Add the dates, coconut milk, and cornstarch to a blender and blend on high until very smooth.
Place a small saucepan over medium-high heat and add the coconut sugar. Pour the blended date-coconut mixture on top and bring to a simmer. Cook, stirring occasionally, until all of the sugar has dissolved and the mixture is glossy. Add the vanilla extract and salt and stir well to combine.
Serve the caramel sauce with sliced apples, or drizzle it over vegan baked goods. Enjoy!
