Prepare the bowls

Make a small tear in the top of the quinoa bag and microwave for 1 minute. Halve the lemon. Divide the quinoa between serving dishes and top with Chickpea Salad and beets. Top with dollops of Scallion Cashew Cheese. When you’re ready to eat, squeeze lemon juice over the bowl and drizzle with olive oil.
