French Patty Melts
with Caramelized Onions & Dijonnaise
The comforting, classic patty melt is a simple hamburger patty, melted cheese, and tender onions sandwiched between toasted bread. For our elevated plant-based version, we use green veggie burgers and caramelize the onions until they are sweet and golden brown. Instead of cheese, we slather the toasted sandwich bread with creamy, mustardy "mayonnaise". Crispy fries, tossed in a French mustard and herb blend, are the perfect dipper to sop up any extra Dijonnaise.
INGREDIENTS
- 1 russet potato, cut into 8 wedges
- 1 garlic clove, peeled and minced
- 1 tbsp French mustard and herb blend
- 1 yellow onion, peeled and thinly sliced
- 2 Actual Veggies® Green Burgers
- 1 tbsp Dijon mustard
- 1/4 cup vegan mayo
- 4 slices of sourdough bread
- 3 tbsp + 1 tsp olive oil*
- Salt*
- Pepper*

INSTRUCTIONS
Preheat oven to 425°F. Combine potato wedges, 2 tsp olive oil, and a pinch of salt and pepper on baking sheet and toss. Roast for 15 minutes. Add garlic and French mustard and herb blend, toss to coat, and continue to roast until potatoes are browned and crispy, 5 to 10 minutes. (4-serving meal: use 4 tsp olive oil)
Heat 2 tbsp olive oil in large nonstick skillet over medium-high heat. Add onion and a pinch of salt and pepper to one side of skillet. To other side, add burgers. Cook onions, stirring occasionally, until soft and starting to brown, 10 to 12 minutes. Cook burgers until golden brown, 5 to 6 minutes per side. Transfer burgers and onions to plate and cover with foil to keep warm. Set skillet aside for step 4. (4-serving meal: use ÂĽ cup olive oil) (TIP: For the 4-serving meal, cook onions in one batch and burgers in second batch.)
Stir together mustard and mayo in small bowl. Spread Dijonnaise evenly on all slices of sourdough. Place burgers on bottom slices of sourdough and top with onions. Top with remaining sourdough.
Heat 2 tsp olive oil in same skillet over medium heat. Add patty melts and cook until golden brown, 6 to 8 minutes per side. Cut French patty melts with caramelized onions and Dijonnaise in half. Serve with fries and extra Dijonnaise. Enjoy! (TIP: For the 4-serving meal, work in batches, adding more oil as needed.)
