Raw Coconut and Cacao Bites

It was this snack that convinced us of the need to include a healthy snack in all meals from The Purple Carrot! These take 5 minutes to make, are incredibly delicious, and use all whole ingredients - no refined sugars, no weird additives, just pure goodness that you can snack on all week! INGREDIENTS

  1. 1 cup coconut flakes
  2. 1 cup almonds
  3. 3/4 cup pitted dates
  4. 4 tablespoons cashew butter
  5. 2 tablespoons raw cacao
  6. 1 tablespoon coconut oil

INSTRUCTIONS

Prepare.

Start by putting the almonds and coconut flakes in a food processor or blender until a flour starts to form, about 1-2 minutes.

Add the cashew butter, coconut oil and cacao blending for a few seconds before slowly adding the dates. Continue to blend until everything has been combined together to form a sticky mixture.

Roll the mixture into bite size balls. Eat immediately or let firm up in the refrigerator for an hour if desired. Enjoy!
