Superfood Kelp Noodle Salad

INGREDIENTS
- 1 cup brown rice
- 1 cucumber
- 1 tablespoon sesame oil**
- 2 tablespoons rice vinegar**
- 2 tablespoons tamari**
- 1 cup edamame
- 1 cup kelp noodles
- 1 1/2 cups shredded carrots
- 1 1/2 cups shredded green cabbage
- 1 1/2 cups shredded red cabbage
- 1/2 bunch cilantro
- 2 tablespoons sesame seeds
- **sauce mix
- 2 cups water*

INSTRUCTIONS
Prep: Rinse the kelp noodles in warm water and chop noodles in half. Peel the cucumber and discard skin. Using a peeler or mandolin, peel the cucumber into thin long strips. Remove cilantro leaves from stems, mince the cilantro leaves and discard the stems.
Bring the brown rice and 2 cups of water to a boil in a large pot. Reduce heat to low and simmer covered until rice is cooked, about 20-25 minutes.
Give the sauce mix a quick shake to reincorporate the ingedients.
Add the green and red cabbage, carrots, cucumber, kelp noodles and edamame in a large bowl. Add the sauce and toss well.
When the rice is finished cooking, add to the bowl and toss once more to incorporate.
Garnish with cilantro and sesame seeds. Enjoy!
