Tempura Sweet Potato Bao

with Quick Peach Kimchi & Meyer Lemon Aioli

Light and crispy, tempura is known for being on the healthier side of fried. It’s important to get the batter correct, so if it looks too thick after you mix in the water (the orange color of the sweet potato should show through the batter), add an extra tablespoon of cold water. The meyer lemon will give the aioli a rounded lemon flavor, and peach will counterbalance the spice in the kimchi. Warm the buns in the microwave if you’d like them hot.
