Avocado Sushi Bagels
with Smoked Nori Spice & Kimchi
- 4 whole wheat bagels
- 2 avocados
- 1 scallion
- 4 oz vegan cabbage kimchi
- 1 tbsp smoked nori spice
Toast the bagels. Halve the avocados and remove the pits. Thinly slice the scallion. Roughly chop the kimchi.
Scoop out and mash half an avocado onto each toasted bagel. Top with sliced scallion, chopped kimchi, and smoked nori spice.
