Peanut Butter Cups
Yummy little morsels of peanut butter and chocolate chips are the perfect way to end a plant-based meal!
- 1 cup pitted dates
- 3 tablespoons peanut butter
- 3/4 cup rolled oats
- 1/4 cup chocolate chips
- Food processor
- Large mixing bowl
Fill the large mixing bowl with hot water. Add dates and soak for 10 minutes. Drain, then squeeze out excess water from dates. Place in food processor and roughly chop.
Add peanut butter and oats to the food processor. Pulse until a sticky dough forms. Move the dough to the large mixing bowl.
With your hands, fold in chocolate chips and roll into balls. Enjoy!
